Almost all medieval europeans had work to support themselfs. Even the nobnles and wealthy had a number of resposobilites. Most people did not have offical occupations or education, but they still had jobs to do. peasents got not nessesary good jobs with a well paiying boss, But they got busy they grew crops, hunted, and made the stuf they needed for daily life. The poor made beds and things like that for themselfs. That I think would be hard.
Occupations even if they were bad often were passed down from father to son. I dont think I would wont my dads job but if I had to it would not be that bad I geuss. The resson we have the last names smith, chandler, and other names that sound like occupations is because the occupastion was often the lastname of the person. I wounder ir you would have the last name castle bilder ir you built castels.
